Going back to the source of Olivier Leflaive's first tasting table in 1997 is the wish of his daughter Julie, who is so attached to the idea of transmission, like a link between the two generations. A cuisine that's straightforward and direct, that goes straight to the heart of the matter while respecting the products, a cuisine of memories. Roasted veal served rosé, caramelized turnips, onion confit with ginger and reduced juice: this is one of the finest proposals, dishes sublimated by the estate's wines.
