What is rennet? It was the fascinating Patrick Granday, CEO of Présures Granday Laboratoire Abia, who explained it to us! Rennet is the product that allows the cheese miracle, the coagulation of milk, it is the ingredient that cheese makers cannot do without if they want milk to become cheese. Rennet is the only coagulant authorised for the production of cheeses with a PDO. Among these: Chaource, Epoisses, Brillat Savarin, Morbier, Comté, Beaufort...
