He produces his own flour from the wheat he grows, and for the past few years, Thomas Leconte, "paysan biscuitier", has been running his own shop in Granville, called Les Délices d'autrefois. It's a particularly apt name, since the flavours of yesteryear come back to your taste buds when you sample one of his shortbreads, waffles, crêpes, special sourdough breads or brié. You'll enjoy a wonderful rereading of traditions, with recipes from the past and those of today, always with the good taste of craftsmanship!
