The food here is Valais cuisine, richly prepared and served. Good fondues, as successful in the set exercises (boletus fondue) as in the free program (Williams pear fondue). The interior is perfectly rustic, but just as elegant as the kitchen. Service is attentive and friendly, and prices are surprisingly reasonable. To whet your appetite, you see half a wheel of raclette cheese gracefully dripping onto your plate.

Here, near the magnificent castle of Brig, everything is period (1640 dining room and 1530 grill). Like the gargantuan lords of yesteryear, you can tackle solid traditional dishes brought up to date, but also indulge in delicious vegan, gluten-free or lactose-free options. There's something for everyone. The dishes change regularly, and the emphasis is on quality and regionality. We also come to this address for the setting, the beautiful terrace under the arcades and the very friendly welcome.
