This is said to be the only underground champagne cellar in the Southern Hemisphere. Nicky dug his hole with his workers and used river pebbles to create an earthquake-resistant framework. His Krone borealis brut is highly rated, and can be purchased locally. But the more curious will want to visit the farmhouse; over three hundred years old, it has been completely restored, retaining the cachet of its heritage and its contemporary renaissance.
