Australians eat them scrambled and then "folded": order the folded eggs for a taste. Sandwiches, salads and wraps are just as good, with a healthy twist (quinoa, avocado and kale salad galore). Ruby's stands out for its surfy decor, which gives the impression of being on the beach. Apart from the classic breakfast dishes, simple and well executed, let yourself be tempted by the Vegemite toast (don't spread too much, for starters...). The burgers, especially the Bronte (with toasted bread slices), are excellent.
