Then, thanks to Olivier Monod and his descendants - Jérôme Monod and his sons, helped by Yoann Malandain, the steward (a fan of biodynamics - he managed to preserve his founding family's requirements and taste for careful work. Made up of twenty hectares, vinified with care and patience, syrah, grenache, mourvèdre, vermentino, white grenache are fully expressed, to give rise to exceptional wines. Let's mention for pleasure Château Fontvert, a rosé organic wine from a black grenache blend (85%), mourvèdre (10%) and syrah (5%), where are mingling powerful aromas of red fruits, white peach and citrus fruits (wine from grapes in conversion to organic farming) and the pink Mourre, a biological wine from a selection of the best juice from direct pressing of grenache.

The vines grow on the hillsides of the Luberon mountain, enjoying exceptional conditions for their development, with a Provencal climate mixed with Alpine influences. Thanks to these cooler nights in summer, the wines of the Luberon are naturally well-balanced. The wine growers have a wide range of grape varieties to compose their wines. Syrah and grenache, emblematic grape varieties of the Rhône Valley, constitute the majority of blends in red and rosé; White grenache and vermentino are widely used in white wine blending. Structured and generous, the rosé wines of the Luberon will surprise many by their freshness and nose of red fruit, and are ideal for accompanying white meats or exotic cuisine. Balanced and elegant, red wines are gourmet ones, with fruity aromas and with spicy finish. At a table, they will do wonders on red meats, dishes in sauce or seasoned. Another more concentrated red style also exists, with a velvety texture and aromas of cocoa and ripe black fruits, perfect on meat of character, such as the lamb of the Luberon. Fresh and aromatic, white wines are characterized by their liveliness in the mouth and their elegance, with dominant floral notes, perfect with fish and goat cheese from the region. "Tasting a wine from the Luberon is also a way of tasting our beautiful mountain ", as Joël Bouscarle, president of the Union des vignerons de l'AOC Luberon says.

Florian Girbal, a child of the country of wine, invested the castle cellars in 2006, after extensive renovation work and a degree from the University of Suze-la-Rousse in the pocket. Local appellation obliges, the wines of Luberon are majority: La Citadelle, Val Joanis, La Verrerie, Bastide du Clos, Ruffinato, Domaine de la Garelle, Château de Clapier… There are also good wines from the Rhone valley and the slopes of Aix. In summer, enjoy the natural and welcome freshness of the place, and ask to borrow the stone staircase, narrow and winding, which leads to a vast area dedicated to wine-related animations, exhibitions or seminars.
