Our favorite is Hugo Loridan Fombonne, who runs the kitchens at Les Fines Roches, where he was second in command until 2018. His signature dish is well worth the trip if you're a fan of sweetbreads, seasonally adapted, confit in red wine and served with artichokes from Provence. You can sit inside in the dining room, or out on the château's terrace in summer, and enjoy the food and the view of the estate's vineyards. Bistronomic for lunch and gastro for dinner.
