The company, founded by Baptistin Fouque in 1864, still makes nougats, syrups, calissons and cookies using traditional, hand-crafted methods for which it alone has the secret. The store, in the center of Signes, is open from early May to Christmas; and for the curious, the factory can be visited, free of charge, by reservation. Fouque nougats (and what nougats they are!), handmade in century-old cauldrons, are produced only from September to Christmas. They take pride of place among the thirteen desserts.
