Couscous is being honored and cooked by numerous chefs and businesses across the city. From the traditional to the unusual.

What dish so beloved of the French could better symbolize Marseille and its great cultural and culinary melting pot? It was with this in mind that the Grandes Tables de la Friche and Emmanuel Perrodin launched this festival a few years ago. Traditionally, a grand opening weekend is held at the Friche Belle-de-Mai, followed by several days of festivities where couscous is honored and reinterpreted by hundreds of the city's restaurants and businesses. A star ingredient is chosen for each edition: after harissa, sardines were in the spotlight in 2023. 2024 will once again be a culinary highlight.
