Nolwenn had a macaroon factory in Mauritius, where she lived, producing macaroons with local flavors: pineapple, coconut rum, lychees... Her recipes evolved when she arrived in Provence in 2021, adding ginger, lavender, mimosa and calisson for macaroons with subtle flavors. By making them with 30% less sugar and local and/or organic ingredients, she achieves a powerful flavor and bold fusion. This "insolent story of taste" is generously shared during workshops at her home in Le Puy-Sainte-Réparade.

Here, you'll immediately be charmed by the warm, elegant setting, inviting you to a unique culinary experience. You'll discover a wide range of macaroons, from classics to unusual creations such as black sesame, pure buckwheat or frangipane. You'll also be tempted by Provençal delights, such as macaroons with homemade calisson cream or those with infused organic lavender flower. To cater for all tastes, Nolwenn has developed a range of vegan options. Each creation is carefully prepared, featuring local, seasonal products. Among the ingredients, lavender and basil are organically grown. What's more, to offer you a more intense taste experience and healthier products, the house offers macaroons made with less sugar, no colorants and no preservatives. The patisserie also organizes macaroon-making workshops, open to curious children and adults in search of new experiences. These workshops will reveal Nolwenn's secrets for making delicious macaroons, while allowing you to create your own. For your special events, Nolwenn can also prepare personalized pièces montées or mini macaroons.

Madagascar vanilla|Organic poppy seeds, roasted
An ultra-airy ganache made with exquisite Madagascar vanilla beans, with the intense flavor of real, authentic vanilla! The refinement of this macaroon is enhanced by the organic poppy seeds roasted on the shell, reminiscent of a black vanilla bean and adding a crunchy crunch. Poppy seeds are rich in calcium and excellent for cardiac activity.
Black sesame
A pure paste of roasted black sesame seeds, homemade, and then relaxed in a sugar-free whipped cream. Black sesame seeds are affixed to the shell of the macaroon, with a taste reminiscent of roasted hazelnuts. In addition to being rich in magnesium, iron and vitamins, black sesame also has antioxidant and anti-inflammatory properties.
Homemade calissons cream
Genuine organic orange blossom water, uncut. Generous quantities of candied oranges from Apt. Plenty of almond powder. Very little sugar. So well done! Candied orange peel on the shell.
Traditional black olive tapenade|Freshly chopped chives
Tapenade from Lydia's market in Puyricard (13), with freshly chopped chives . A perfect accompaniment to any aperitif, whatever the season! Sweet and savory fusion.
