MONSIEUR CHOU
Mr. Chou's cabbages have been our darlings since 2015, when Loïc Derbay created this concept in Aix, and recently in Marseille. In the windows, sweet and savory cabbages are pampered, ensconced in their pleated ruffles. The fillings follow the seasons. Yes to the Mara des Bois strawberry and mint whipped cream, the yuzu cream and basil whipped cream, the Damascus rose, the Tatin style, the tropézienne, the Paris-Brest, and yes to the guacamole-crevette, the eggplant caviar, the smoked salmon, the goat-pepper, or the tagine-style cabbage. You can taste it on the spot in the tea room, or at lunchtime with a savory cabbage, a salad and a sweet cabbage. Loïc shares his know-how during a monthly workshop.
