Basque excellence since 1660. The origins of the Basque macaroon date back to the ^17th century with King Louis XIV. A jealously guarded recipe handed down from generation to generation, today Andoni and Miguel Telleria-Adam are the guardians of tradition, while at the same time innovating. These delicious, soft, melt-in-the-mouth macaroons, the only genuine "Pare Gabea", are made daily by hand using family know-how, as are the Basque cakes, tourons, chocolates and praline spreads. It's impossible to leave the Basque Country without a box of macaroons!

Open daily 9am-7pm, until 8pm in summer. Free visits and tastings. Macaroons: tins of different sizes: 12, 18, 24 pieces, including metal Collector tins renewed regularly. 2 stores in Saint-Jean-de-Luz and Biarritz. Store open to the public. Online sales at www.maisonadam.fr.

The Adam House

Already Louis XIV in family had for the Adam macaroon the papilla which moves!

Imagine since then the confidences between generations of pastry chefs to preserve the secular and exceptional character of our macaroon. Imbued with Basque culture, our know-how is nestled in the heart of the Adam House, and, passed down from generation to generation, it conceals a jealously guarded secret in the service of excellence.

In 1660, in Saint-Jean-de-Luz, during the wedding of Louis XIV, the mother of Louis XIV and the Infanta of Spain, Marie-Thérèse, fell in love with the delicacy of Monsieur Adam's macaroons.

These same "Paré Gabéa" (without equal in Basque) crowned the glasses of white wine served in the Adam's pastry shop to the Russian refugees, artists, Breton fishermen and so many others who crowded in at the beginning of the century.

Today, Andoni and Miguel Telleria-Adam are developing the business they received from their father Jean-Pierre and are keeping up the tradition while innovating in this demanding craft of pastry, confectionery and chocolate making.

Superbe adresse pour les gateaux basques

Nous avons adorés leurs gâteaux basques qui sont tout à fait abordables. Les boutiques sont très belles et les vendeurs ne son pas avares en explications. Pour le reste, avis mitigé sur des produits certes toujours bons mais un peu chers (macarons notamment).
