Onake slowly smokes Basque trout, local tuna and Scottish salmon. Each stage is carried out by hand, and the production cycle is interspersed with rest phases. Smoking is delicate, using beech wood. In addition to smoked products, Onake presents salmon and fish in rillettes and ready-made dishes, each more delicious than the last.
