In the heart of the Soule valley, bordering Béarn and Spain, the small village of Gotein offers a gourmet break thanks to the Xokottua inn. It's the kind of inn you'd expect to find, where the locals and holidaymakers are already busy at lunchtime. Copious formulas and generously served dishes: a plate of Salamanca ham, gizzard confit salad, lamb sweetbreads, duck confit, scallops and a choice of vegetarian dishes... and Basque cheeses. A job well done that will satisfy even the hungriest appetites.
