Corentin Courtien and his team open up a table of uninhibited gastronomy for a culinary journey full of flavor and respect for nature and the seasons. The chef sublimates the raw products of the French terroir to create distinctive, aromatic, delicate and surprising flavors on beautiful plates. Example of today's menu: scallop carpaccio, Jerusalem artichoke purée, passion fruit, coriander oil, followed by Ferté-Bernard lamb, sweet potato cremeux, roasted chestnuts, pear pickles and, for dessert, finger pain de gênes with poppy seeds, lemon-yuzu whipped ganache, roasted pineapple, lemongrass ice cream.
