Fabien Feldmann, Michelin-starred chef at L'Impertinent in Biarritz, unveils his second creation: a bistronomic restaurant-bar in the heart of Bayonne. This former courthouse, subtly revisited with a beautiful alchemy of materials, offers cosy spaces both on the terrace, surrounded by buildings with typical architecture, and inside, with a view of the brigade and its privatizable lounges. Pork belly, smoked octopus, homemade black pudding, ceviche from the fish market, calf's head, earthy ivy gnocchi, chocolate coulant... talent at every turn.
