La Table, on Bayonne's quayside, deserves its makila d'honneur (a traditional Basque stick offered as a mark of respect). The cuisine is refined and well-crafted, at reasonable prices. At the helm of the establishment is Sébastien Gravé, who has worked with the greats of gastronomy, and whose dishes are perfectly textured. Scallops a la plancha with Lasarte oyster mushrooms, marinated and burnt pollack with miso sauce, roasted sweetbreads and macaroni gratin with aged Parmesan, candied Golden apples and raw Granny Smith... A must-try!
