Georges and Co is an oyster bar-restaurant for connoisseurs, opposite Les Halles de Bayonne on the banks of the Adour River, featuring regional vintages, oysters from all over the world presented according to arrival and charcuterie. In addition to oysters and a glass of Tariquet, this small establishment with its counter serves rabas, fried squid with aioli sauce, tapas of the day, cassolettes of chipirons a la plancha or octopus, salmon, fish soup and ham. A fine assortment of cheeses and desserts, not to mention a fine list of white, red and rosé wines.
