A magnificent farm whose success can be praised: to impose a cheese, the "tome du Ramier" from a region which, a priori, is not frankly one of the most cheesy, it was not a foregone conclusion. This is what the Maraval family has achieved, with a herd of 110 milkmaids and a magnificent high-tech production tool. The cows themselves choose the milking time with a self-service system. Today, the daughters Edith and Hélène have taken over the farm. The shop offers ripened cheeses and fresh products.

The Larroque canning factory is an institution as well known as the Ingres museum. Specialising in the production of preserved duck fat, the 180 m² shop is attached to the workshops where the palmipeds of 25 regional producers are processed. Here, handmade products and traceability are the signature. Since 1980, its know-how has been recognised, and in view of this success, the range has been extended: home-made charcuterie, Label Rouge smoked salmon from Scotland, pork, ready-made meals, but always with the same high standards, regional products made on the spot.

"Organic, white and red" is the motto, and we almost feel like adding "rosé"! A small, colourful cellar in the town centre run by Simon Delpérié, a young enthusiast. The emphasis is on the wonderful wines of the neighbouring Languedoc region, produced by organic farmers. Of course, you can also find all the Gallic terroirs. The ideal is to let yourself be tempted by a tasting on the barrels placed on the pavement of the street. The shop has moved a few dozen meters to more spacious premises, but still in the rue du Greffe.

Named Bows -for Brave Occitan Wild Spirit-, this company feeds its stills with cereals grown nearby, in the South-West of France, and malted in Salvagnac in the Tarn. Benoît Garcia makes rum, gin, vodka and flower beer from them... In his barrels, collected in the cooperage of the region and the vineyards of the corner, ages also a whisky, which will officially bear this name at the end of three years of maturation.
