Learning the job of a farmer is done in the field, to the delight of lovers of good products to be obtained at the cannery. With six workshops for cultivation, breeding and processing, the apprenticeships help young people get started in the profession. Foie gras, gizzards, pâtés, duck breast filled with foie gras, daube or cassoulet are sold on the spot.

Read moreCroustade Mirandaise is so famous that it has already been featured on the midday news. Christophe Pérès perpetuates the tradition of croustade, tourte and tourteau in his factory. Fans come from Tarbes and Pau to bite into this typically Gers pastry, made by piling thin sheets of buttered pastry on slices of melting apple. There are variations with prune, pear-chocolate or even foie gras, but purists prefer it drizzled with Armagnac.
