Simon Rousseau is a culinary creator of ice-cream flavors, inspired by Thai techniques to produce ice-cream rolls from -20°C to -25°C. The products are made from a milky base with a hint of agave syrup, seasonal fruit and local produce from sustainable or organic farming wherever possible. Simon Rousseau offers ice creams for rolling, milk-free eskimos and granités. He takes part in many events where he can also offer alcoholic or savoury ice creams.
