If you pass through the small oyster farmers' port of Port Leucate (shellfish base) the last hut that you will find is La Cabane des Tontons, go ahead! Open in summer, you can buy their oysters, clams, meadows and mussels to take away or eat on site (see restaurant section). Cul d'Oursin aka Christophe Guinot is a lover of his profession, do not hesitate to ask him, he will be happy to explain to you the techniques he uses to make his oysters so beautiful and fleshy. Charismatic Oyster Farmer who loves beautiful stories, he does not hesitate to scent the water in his rosemary parks picked in the nearby garrigue or to open a few bottles of champagne on his oysters... we love it!
