Chef Cyrille Robert, who trained with Gérard Vié at Les Trois Marches, pays homage to his master's former Versailles establishment by taking on the same name. Yet this new Trois Marches has its own style, with a warm, sober decor and a clientele mainly made up of regulars. The menu features inventive seasonal dishes. Try the chestnut cappuccino with foie gras espuma, pan-fried monkfish cheeks or braised beef cheeks. Next door, the Trois Marches boutique offers quality snacks.
