The origins of Bordeaux cannelé are a mystery. They were made by the nuns of the Annonciades convent, who collected wheat from the holds of ships and egg yolks from the cellars on the Quai des Chartrons, the egg whites being used by the winegrowers. They added a drop of rum and a few vanilla flakes from the islands. Today, Bordeaux cannelés have become emblematic, and are a hit beyond our borders!
