The "coop de coops" is exclusively made up of Comté cheese producers. The cooperatives have joined forces to pool their cream to produce pasteurized churned butter. Twenty-six Comté cooperatives within a 100 km radius produce around 700 tonnes a year. Collected twice a week, the cream is first pasteurized, then matured in the traditional way, before being churned and transformed into butter.
