The term "Balerne" comes from a Latin deformation meaning "isolated". This would justify the small remote area between Loulle and Mont-sur-Monnet. Let's just say that this dairy operates between Champagnole and the lake of Chalain. 8 farms bring it 2.5 million litres of milk per year. The Comté cheeses are matured for between 10 and 30 months and are sold in the friendly shop next to the chalet. The chalet also produces butter and cream. A discreet workshop, but with real mountain cheeses.
