At the Ferme des Chazeaux, we have been breeding snails of the Gros Gris variety for 25 years. Christophe Delacroix, a passionate snail farmer, ensures that the snails grow well and are transformed into delicious dishes. In the workshop, they are prepared according to several recipes. The traditional Bourguignonne snails with their shells, but also in a crispy fromentine shell with various fillings; as appetizers, as mousses to spread, in cassolettes or in jars to cook. A real treat!
