South of Bastia, on the edge of the ponds, the Sanguinetti family produces an exceptional boutargue made from wild mullet roe. The two cousins, Jean-Louis, are at the origin of this business, which is based on an ancestral local recipe. The counter sells whole bottarga in two bags, grated bottarga in bags or jars, ideal for bottarga pasta, and even kosher bottarga. On-site sales by appointment, online and in the Comptoir de la Boutargue boutique in Marseille.
