Philippe Farinelli, a talented oenologist, has been one of the island's leading winemakers since 1998. But his property was already considered as one of the jewels of Corsica's winegrowing in the 19th century! His range is remarkable and very much in demand. Notably the sublime "Casteddu" cuvée in red, white and rosé, made from selected plots with low yields and aged in oak barrels, ideal as a wine for laying down. The Domaine Saparale AOC Sartène cuvée is also available in all three colours and is the perfect accompaniment to all kinds of meals with its distinctly Sarthe accents. There is also an adorable hotel section consisting of beautiful charming residences, 3 magnificent sheepfolds immersed in the heart of the surrounding nature, among the 1,000 hectares of the property, with a swimming pool. LES CANISTRELLIS

Mediterranean grocery

Ingredients: 300 g flour - 1 lemon - 100 g sugar - 1 sachet of vanilla sugar - 2 tablespoons of anise seeds - 1 sachet of yeast - 7 cl of olive oil - 5 cl of white wine.

Grab the zest of the lemon and chop it. Mix the flour and yeast in a bowl.

Add the vanilla sugar and 60 g of sugar (keep aside the rest), the anise seeds and the zest. Then incorporate oil, white wine and lemon juice. Mix the whole until you get a sticky and smooth dough. Préchauffez the oven at 180 ° C. Flour the work plan and spread the dough over 1 cm thick and sprinkle with the rest of sugar. Cut 3 cm squares with a wheel. Put them on a plate covered with baking paper and clean 12 min. Turn off the oven and let the canistrellis rest 8 min before they get out.

The San Micheli estate is one of the oldest in the "Sartène" appellation. Owned by the family since the 18th century, the estate was taken over in 1974 by Jean-Paul and Bénédicte Phélip. The vineyard is located in the Ortolo Valley, on the hillside at the place called "Capaneddi", facing south-west, at the foot of the Cagna mountain range, which provides it with temperature variations beneficial to the cultivation of the vine. The vineyard today covers 22 hectares planted with traditional grape varieties of the appellation, managed in a reasoned and traditional way. Our favourites: The red Tradition cuvée made from sciacarello, niellucciueto and Carignant grapes and the Alfieri Polidori cuvée, the latest addition to the estate, is a tribute to an ancestor of the family, a blend of sciacarello and niellucio by plot selection. A magnificent, modern, carefully decorated, freestone guest house, renovated in 2006, welcomes you to take full advantage of the estate and prolong the pleasure of this preserved nature.

In good years, it produces 900 hl of reds, whites and rosés certified AB - agriculture biologique - and practicing biodynamics (Demeter certification). The fruity, oak-aged Esprit de la Terre cuvée is a firm favorite, as is the Lion de Roccapina cuvée. This estate, created in 1964, extends over 73 hectares, 45 of which are in the Sartène AOC and is located 8 km from Sartène, on the road to Levie, after the famous Pisan bridge at Spina Cavallo. In the superb tasting cellar, an interesting range of award-winning wines is presented. These precious nectars are the result of an old-fashioned cultivation, with the greatest respect for this land blessed by the gods. The range is completed by a fruity rosé, but dangerous under the sun and an original red Muscat Muscateddu 50 cl for the aperitif or chocolate desserts.
