Let's start at the beginning: what's the drêche? This is the solid residue of the grain that was used to make beer. Usually it is used to feed cattle. But Christophe and Caroline had another idea: why not use this super food rich in fiber and protein for us humans? So they travel the region to meet brewers from whom they collect the precious product before pressing and drying it to make sweet or savoury cakes, granola and ultra crispy nuggets.
