While the cuisine is strongly inspired by the traditional recipes of our grandmothers, the chef doesn't hesitate to take us to dishes of his own inspiration. In addition to regional specialties such as Flemish carbonnade or homemade potjevleesch, tripe products are given pride of place (but not only): sweetbreads, pigs' feet and oxtail in andouillette... Desserts include reinvented classics like chocolate mousse and Picon.
