For four generations now, the David-Heucq family has been cultivating vines and producing champagne in this typical terroir, whose Lutetian limestone soils are strewn with shells. The family's wines are distinguished by their distinctive, elegant style. Cuvée Réserve Brut is the very expression of the local terroir, with a blend of three grape varieties. Finesse, fruit and a superb white-fruit finish. The 100% Chardonnay Cuvée Étincelle is also very popular.

In the heart of the Montagne de Reims and spread out over several communes, we find the vineyard of Christian Patis, a winemaker who has always worked the vine with love, and who perpetuates the traditional know-how of the region. Produced on the property, a nice range of wines is offered, like the Grande Réserve Brut, a racy and fruity wine. The Brut Rosé as well as the Brut Millésimé are signature wines which it would be a shame to miss. We especially like the BDB, a wine of character with ripe fruit aromas. A marvel!

A family business since 1971. David and Vincent Lelièvre inherited the know-how and professionalism of their father, and how to use it advisedly to produce a wine of good quality. For a few years, the production of wine, ennobled in 1998 by a well-earned AOC, has been more than largely designed upwards. The famous Gris de Toul are added Pinot Noir, white in auxerrois and traditional method and sparkling, very successful. The grape varieties of today (gamay, auxerrois and Pinot Noir) are prepared and controlled by the house of hands of Masters. The wines are charming, fruity and lively and worth features. You can watch them largely grey in Lorraine specialties or aperitif, white on fish and shellfish, or, for a little old red, on duck or game. Who has not enjoy a trout with the traditional menu are Toul does not know what happiness means: fruit and the acidulado of one that leads to the softness of the meat of the other. It was in 1875 that the Marguet Bonnerave house was born in Ambonnay, under the impulse of Emile Marguet. Since 2005, the house is called Marguet Père et Fils, and it is Benoît, from the fifth generation of winemakers who is in charge of the domain today, a vineyard cared for in biodynamics, phytotherapy and aromatherapy, with work of the soil with a draft horse since 2010, for the better being of the earth. In the heart of the Montagne de Reims, the Michel Arnould et Fils vineyard extends over 12 hectares of vines planted mainly with pinot noir. The wines of the domain are distinguished by their frank vinosity and their aromatic power. We find cuvees with a clear character like the Brut Tradition, a 100% pinot noir. The Carte d'Or cuvée is a blend of pinot noir and chardonnay grands crus, which come from the oldest vines of the estate. The nose is very expressive with generous aromas evolving subtly on the toasted.

Brother and sister, Clotilde and Nicolas Chauvet have joined their efforts and their common passion to manage the family estate located on two fabulous terroirs: Rilly-la-Montagne (premier cru) and Mont-Saint-Pierre. Each year, the duo produces beautiful wines such as the Cuvée Brut Tradition, made from a blend of equal parts of the three Champagne grape varieties, and a blend of the year's harvest and reserve wines (30%); and the Cuvée Brut Sélection. Today, Jean-Marc Meyer manages this small estate founded by one of his great-grandfathers. He tends some 9 ha of vines, including 1.5 ha on the Grand Cru Hatschbourg overlooking Hattstatt. Jean-Marc is renowned for his long-keeping wines: his Pinot Gris Vendanges Tardives has been acclaimed by the Guide Hachette des Vins. The Louis de Sacy Champagne is named after this man of letters, academician and brilliant lawyer of the th century. The Maison Louis de Sacy is located in Verzy, a land «Grand Cru», very famous on the slopes of the Mountain of Reims, as only other municipalities in the region. It is here that, for 13 generations, the Sacy family has been cultivating the vine with passion, always bearing in mind the idea of transmitting its know-how. Most of the vintages are developed with a majority of Pinot Noir, such as Original Raw and Vintage Grand Cru.

Founded in 1970, Alexandre Bonnet is an estate that has grown over time. Planted mainly with Pinot Noir, in the Riceys region, its vineyards now cover 47 hectares. "Les Riceys",is one of these privileged terroirs, characterized by steep hillsides with excellent exposure to the sun. The commune of Les Riceys is unique in Champagne in that it is home to three appellations: Champagne, Rosé des Riceys and Coteaux-Champenois!

The house of Paul Dangin et Fils, founded in 1947, just after the war, has the particularity of having eleven members of the same family working in harmony, from the work in the vineyard to the bottling. What a pleasure to be able to taste Patrick Soutiran's wines! For five generations now, the winegrowers have succeeded one another in this beautiful domain located in Ambonnay. So obviously, the wines produced do not fail to their reputation and are regularly awarded during competitions. A beautiful range is proposed to the champagne lovers, among which we find a very solid cuvée blanc de blancs Premier Cru, aged in cellar between 24 and 36 months.

This beautiful champagne house was created in 1960 by Pierre and Françoise Lancelot Royer, and it is now their daughter Sylvie who since 1996 is in charge of the property. Today, Chantal Bara is in charge of the management of the estate and focuses her efforts on export development. Since 1982, when Daniel Laurent and his wife Martine took over the estate, Domaine Laurent Gabriel has forged a solid reputation in the region. The company's cuvées are produced from the property's three hectares of vines on the slopes of Avenay-Val-d'Or (Premier Cru) and Avize (Grand Cru). The Cuvée Grande Réserve, composed of 75% pinot noir, 20% chardonnay and 5% meunier, particularly seduced us with its notes of cooked peach and honey. Divine with honey-marinated duck kebabs!

Spread over 17 communes, 3 of which are Grand Cru, the family vineyards of Maison Le Brun Servenay represent around 7 hectares of vines, some of which are octogenarian. These are the vines used to produce the 2005 Chardonnay cuvée. The other wines (Exhilarante 2004, Sélection NM, Rosé NM, Réserve NM, Cuvée XB 25, Cuvée XB 32), which have code names from spy films, are wines to treasure in your cellar.

Created in the 1970s and located in the Sarce valley, this traditional house offers 5 fine cuvées, including the Brut Tradition, made from pinot noir, the majority grape variety in the Côte des Bars, to be enjoyed on any occasion; the Demi-Sec, with a higher sugar content than the Brut Tradition, is perfect with foie gras or dessert. The Brut Prestige, a blend of chardonnay (80%) and pinot noir (20%), is best kept for special occasions. Located in Barbonne-Fayel, this family business owns a dozen hectares spread over the Sézanne and Côte des Bars regions. With his 3 sons, Jérôme, Lionel and Laurent, Pierre Launay offers you very well worked wines. Their Brut, regularly awarded, caught our attention. In the Gold range, the Grande Réserve and the very beautiful Blanc de Blancs Extra Brut also impressed us. For them, we want to put the small dishes in the big and go hunting for the most beautiful products to concoct amazing food/wine matches!

Barbier-Louvet Père et Fils have been managing a 99% classified Premier Cru vineyard for 6 generations. Pinot noir and Chardonnay are obviously king here, and the vines are worked with passion and great care. The results are very convincing, and the cuvées we discover are of the highest quality. A particular favorite is the L'Héritage de Serge Brut^{1er Cru} cuvée, a real success with its floral nose and fruity palate, and the beautiful Ensemble Prestige Grand Cru cuvée, a very fruity, delicate wine. At Champagne René Bauser, we notice this cadole, the traditional shelter of the winegrowers (a flat stone hut), which has been reconstituted here. We are welcomed in the vast luminous room of the house to discover the work before starting a visit to better understand the elaboration of the local beverage. Champagne, rosé des Riceys, côteaux-champenois are elaborated here; we are taken in the long vaulted cellar decorated with tools and old machines, then we go up by a staircase to find ourselves in the cadole. Valérie and Benoît Lahaye are an atypical couple of winegrowers. Their small estate of 4.4 hectares, spread between Bouzy, Ambonnay and Tauxières-Mutry, is cultivated organically and with animal traction and their wine-making methods are beginning to interest many champagne producers in the region. Non-dosed wines, passage in barrels, non-use of sulfites for one of their cuvée (the Violaine cuvée of 2015, made in very few copies)... Also to be discovered: the Brut Nature cuvée, a fresh and lively wine, or the Blanc de Noirs cuvée.
