In his workshop in Figeac, Fabrice Chassint makes high-flying knives. Fascinated by the object and passionate about aviation, the craftsman combines his two violins of Ingres in his creations. His Figeac is a pocket knife that reproduces a Breguet propeller: a wooden blade formerly manufactured by the Ratier company. The handle is hand-fitted and adjusted and is made of different materials. The Figeac is also recognizable by its notched wheel, which gives it the appearance of a propeller, and which allows the knife to be unfolded and closed with one hand.

Stéphane Rossignol, a well-known figure in the village of Espédaillac in the heart of the Lot, has been at the head of the Auberge Beauville for nearly 25 years. He has created the cutlery shop Le Lotois XLVI where he makes with passion a simple, sober and elegant knife engraved with his hands. His knives are inspired by those he uses in the kitchen.
