Xavier Julien has always been passionate about his estate and one day wanted to create it. After a BTS in Viticulture and Oenology, he planted his first vines in 1997 in Auxerre-Vaux (in a place called "la Côte d'Or"). Now at the head of 4.7 hectares (in Auxerre and Chablisien), he is today the only independent winegrower in Auxerre. His estate, which takes its name from an old fortified tower in the town, offers chardonnay and pinot noir, including a burgundy côtes-d'auxerre "Terroir de Vaux" and a chablis Premier cru "Les Fourneaux".

Domaine Christian Moreau Pere & Fils is a winery located in the heart of the village of Chablis. The Moreau family, which has owned the estate for six generations, owns 12 hectares of vines, including Chablis Grand Cru (Les Clos, Clos des Hospices, Valmur, Vaudésir, Blanchot), Chablis 1er Cru Vaillon, Chablis and Petit Chablis. The estate respects the unique terroir of Chablis by working rationally and applying a policy of yield control. Harvesting is entirely by hand, from Petit Chablis to Grands Crus. Coming from a family of farmers, the agricultural engineer Yann Boissenet started working in the vineyard only a dozen years ago. Since then, more than anyone else, he loves to introduce the wines of the Aillantais, a territory that includes 4 winegrowers and some 25 hectares of vines. This is where the grey burgundy, typical of the region and with an onion skin colour, is produced. In addition to this, the winegrower produces a dozen or so cuvées, including a white burgundy chardonnay, a red pinot noir, ratafias and crémants de Bourgogne.

The vineyards of Domaine Pagnier are mainly located in Béru, Fleys and Chichée. They cover 25 ha and are located in the Chablis and Chablis^1er Cru appellations (Fourneaux, Mont de Milieu and Vaucoupin). Their planting age is between 1 and 60 years, which allows us to offer Chablis Vieilles Vignes. The vines of the Domaine Cyril Houzé are mainly located in the communes of Champvallon and Volgré, precisely on two localities, Cherche-Chaud and Montagne de Colmier. In Cherche-Chaud the vineyard produces complex and tannic red wines for laying down, with dominant blackcurrant aromas, while in Montagne de Colmier less tannic wines with raspberry or redcurrant aromas are obtained. But the Domaine also offers white burgundy pinot blanc, chardonnay, grey burgundy Côte Saint-Jacques as well as a very good ratafia.
