The name of this restaurant, housed in a 13th-century crypt, is a nod to the Kimmeridgian: a subsoil rich in sediments and marine fossils, the source of the distinctive Chablis wines. The cuisine here focuses on fresh, often local, produce and creativity. We loved the eggs en meurette with pinot noir, the grilled andouillette from the very local Maison Colin with epoisses sauce, and the platter of regional cheeses. We also appreciated the lovely terrace lined with wisteria, and the bar open until 1 a.m. at weekends.
