Here's an initiative that can't fail to touch. Supported by Adapei Nièvre, which promotes the inclusion and training of people with disabilities, Bouillon Colbert recently opened its doors. At the helm of this unusual restaurant are 14 people (7 in the kitchen, 7 in the dining room), almost all of whom are disabled. A fine team headed by chefs Olivier Charbonnier and Noël Lantier, members of the Toques nivernaises. On the menu, simple, traditional, absolutely delicious cuisine. And always generous!
