Sébastien Delloy is an atypical cheese maker. He came into the business after a professional reconversion and produces only one cheese, the Condor. It is a soft raw milk cheese matured in a natural cellar, on spruce slats. It can be served hot as a fondue or raclette or cold with a local beer or wine. The milk comes from an organic farm in the commune of Houyet, where Normandy cows are raised. Points of sale, see website.
