Olivier Bys, a molecular biologist by training, set up his brewery in the Pays de Seine et Tille, inspired by the local places to name his own beers. Vélouze, Morte Vieille... names to be taken at face value, starting with "Bois des Mousses". Olivier prefers aromatic hops to avoid creating beers that are too bitter, and his range is completed by a lemonade made with pure lemon juice. Tasting available before you make your choice.

Nichée au milieu de nulle part, la brasserie Bois des Mousses vaut le détour. D'abord pour y gouter et y acheter une très bonne bière artisanale. Et surtout pour y rencontrer Olivier, le patron, un personnage attachant, au parcours atypique qui sait partager sa passion et qui force le respect par son choix de vie et sa volonté de préserver l'"hyper" local.

Wow! The Bois des Mousses beers are delicious. I bought a few caisses to bring home, and I’ll make sure to go again the next time I drive around.
