Olivier Bys, a molecular biologist by training, set up his brewery in the Pays de Seine et Tille, inspired by the local places to name his own beers. Vélouze, Morte Vieille... names to be taken at face value, starting with "Bois des Mousses". Olivier prefers aromatic hops to avoid creating beers that are too bitter, and his range is completed by a lemonade made with pure lemon juice. Tasting available before you make your choice.
