Tast'Vin, the Virginia restaurant and Nicolas Di Sério enjoyed a total revival in 2018.We don't hesitate on the vocabulary, the style is neo-retro, urban or even vintage. Welcoming, reassuring with a dominant dark green duck, the bar is still as majestic as ever and of course there are Virginie and Nicolas who give their soul to the establishment. The style continues in the large room where the modern furniture, contemporary lighting and the 70's paper backdrop have a rather pleasant chic side. Good news, the chief is still Stéphane Giboulot, who has been loyal to the position for about ten years. The menu has become simpler, but remains deeply rooted in Burgundian flavors, with creativity and subtlety in addition. The Cagouilles de la Maison are in a pot, the Eggs are perfect, the Sea Bream is Royal and the Charolais Beef tartare prepared with a knife with homemade fries is like eggs! Everything is prepared homemade, it's as good as it is nicer and vice versa. The wine list offers a precise selection of regional wines and wines from other regions of France. Tast'vin is like our Grands Crus, it improves with age.
