A true Ivrea institution, this glorious pastry owes its fame to Torta 900, patented by Umberto Balla in 1972. Its gourmet recipe, however, dates back to the ^19th century, created by Ottavio Bertinotti, and the secret of its manufacture has been jealously guarded ever since. It's made up of two discs of sponge-like, but lighter, cocoa dough, topped at the last minute with chocolate cream and dusted with powdered sugar. The result is really delicate and melts in the mouth.
