A true Ivrea institution, this glorious pastry owes its fame to Torta 900, patented by Umberto Balla in 1972. Its gourmet recipe, however, dates back to the 19th century, created by Ottavio Bertinotti, and the secret of its manufacture has been jealously guarded ever since. It's made up of two discs of sponge-like, but lighter, cocoa dough, topped at the last minute with chocolate cream and dusted with powdered sugar. The result is really delicate and melts in the mouth.
