Concierges and guides alike recommend it with their eyes closed, so don't be surprised to see a lot of foreigners craving so-called international cuisine. If you're in the mood for real French cuisine, this is the place for you. As the name suggests, there's no set menu for months on end here, but everything on the slate according to fresh produce. One day you'll find snails, another you'll enjoy black pudding purée, truffle risotto or... surprise, because you never know in advance what the slate will consist of. Fabrice will be on hand to advise you according to your tastes, as will chef Sandrine. Back to basics in the bistro spirit? We think so.
