Founded in 1981, Maison Asselot is the most famous ambassador of the genuine andouille de Vire, regularly awarded laurels of excellence in regional and national competitions. The best andouille from Vire, or almost! Handmade from pork belly, smoked in traditional beechwood fireplaces for three weeks, then simmered in a broth, Vire andouille can be enjoyed hot or cold, as an aperitif or at the table. An ancestral know-how, dating back to the 18th century, to discover on our guided tours.

Store open Tuesday to Friday 9am-12pm and 2.30pm-7pm and Saturday 9am-12pm and 3pm-7pm. Guided tours by appointment. Market presence in Caen, Vire and Saint-Lô (Manche). Andouille Festival (late November at the racecourse).
Owner's Message
Originating from Vire, in Lower Normandy, the andouille of the same name owes its fame to an ancestral know-how of the 18th century.
The real andouille of Vire
It is in 1981 that the Maison ASSELOT was created. It is a family business specialized in the traditional production of the real andouille of Vire.
This production is done in the respect of strict rules, such as the manual preparation or the smoking in traditional fireplaces with beech wood during long weeks. This rigorous production allows Asselot to offer a product of very high quality, which you can enjoy as an aperitif, as a starter, cold sliced on good bread lightly buttered, or hot with potatoes for example.
