FROMAGERIE LA HOUSSAYE
Founded in 1810 by Michel Fromage! - This is one of the oldest cheese factories in the Pays d’Auge. In the 19th century, it flourished with the arrival of the railroads: Paris could be delivered in six hours. Then came the war, and the decline until the 1980s. Abandoned for a time, the cheese dairy bounced back thanks to its new owners. Now modernised, thanks to local producers, it holds high the AOC-AOP banner with its two flagship cheeses, Pont-l’évêque and Livarot. Keep your eyes peeled and your noses sharpened: La Houssaye cheese isn’t found everywhere. Its good health has enabled the dairy to start making pavé d’Auge (small and square) and a new, more confidential product, Deauville. With its rounder, softer texture, washed rind and partly skimmed milk, the latter has its fans. We tell you: cheese is a living product that needs to be accompanied to extract the best from it, without giving it perfect shapes. Cheese isn’t a mannequin: it often has defects of shape and line.
