The Tandem restaurant is entirely dedicated to one of Naples' specialties: ragù napoletano. This is a sauce based on pieces of beef and pork simmered for hours in tomato sauce and herbs (not to be confused with our Bolognese sauce, in which the meat is minced). Ragù can be served with various types of pasta (preferably short-cut pasta such as ziti or rigatoni) or scarpetta-style, i.e. presented in a bowl in which bread is greedily dipped. Vegetarian and gluten-free dishes are also available.
