This historic restaurant in Spoleto (the oldest in the city) opened in 1927. It is a family history that is passed on from generation to generation. The speciality: truffles. Situated just below Piazza del Duomo, with a terrace overlooking the garden of Piazza della Signoria, its location and views of the city are really very pleasant. As well as its beautiful 17th century interior made of stone. Luca and Valentina reopened the historic Locanda della Signoria in 2017. Its cuisine is rustic and refined at the same time: fresh pasta, meat, wood-fired mushrooms, all served with the best wines of the region. Traditional and refined cuisine, beautiful terrace. On the menu, the famous tagliata, but also other meat dishes cooked on the grill. The strangozzi al tartufo nero, pasta served with a little oil and truffles, are delicious. You can also taste the typical cheeses and cold cuts of Valnerina. The management of the restaurant Il Panciolle is the same as that of the hotel of the same name, which has seven rooms with bathroom and fully equipped (air conditioning, TV, minibar, telephone, wifi connection).

The setting is all the more appreciable as the architecture of the restaurant room is typical of Spoleto, with its stone arches. The management, which is concerned about the traceability of the products on offer, even goes so far as to include the kitchen within the restaurant hall. On the menu for the primi piatti (first courses), pasta dishes such as penne alla norcina with truffle, gnocchi with radicchio and gorgonzola, soups, and in secondi piatti taste the stracciata d'uovo con tartufo, or thepolpette della nonna (grandmother's meatballs) .

In addition to pizzas, the Tre Fontane's strong point, you'll find dishes of gnocchi, ravioli and strangozzi, but also local meat cooked on the grill.
