The history of the Jewish community in Venice has also left its mark on the restaurant business and, of course, the bakeries. Unleavened breads and kosher cakes (without milk and butter) are delicacies that Venetians frequently enjoy. The Volpe bakery, open since the 1950s, is said to be among the favorites of the rabbi of Venice. Its dry cookies such as bisse, impade(with almond paste) or zuccherini are exquisite. On the savory side, a few slices of thick pizza, olive focaccia and other unleavened breads are delicious.
