Plant for the processing of eel in Comacchio.
It is not a museum but a factory in operation from October to December for the processing of eel. It is divided into three parts: the calata, where the boats loaded with eels and fish arrive; the sala dei fuochi (fire room), the heart of the complex, with its 12 chimneys in front of which the eels are placed; the sala degli aceti (vinegar room) where the slices of fish are covered with brine (salt, water, laurel, vinegar) for the marinade, placed in hermetically sealed barrels and boxes.
